Zoodles are an amazing substitute to pasta as they are packed with nutrients and only 20 calories per cup! Next time you are feeling pasta, try this one out. You will need:
1 1/2 lbs zucchini
olive oil
black pepper
kosher salt
4 small tilapia fillets
1 lemon
2 cloves or garlic
Spinach
Capers
Preheat the oven to 470 degrees. Add foil to a baking sheet and apply non stick spray to the sheet
Cut the zucchini using a spirier or knife into thinly cut pieces and place them onto the trey.
Season the zoodles with olive oil, salt, pepper, and lemon, placing full lemon slices on the tray as well.
Place in the oven for 15 minutes, then increase the heat to a broil for the final 3-4 minutes until it is golden brown.
Meanwhile in a skillet, place 1 ounce of olive oil to cook the filets. Add salt and pepper, and cook 3 minutes per side, then transfer to the plate.
Also cook the spinach, mushrooms, or any other veggies you want in the dish in the skillet.
Finally, toss the zoodles and veggies together with some fresh parsley and the rest of the lemon. Then serve on a plate with the Tilapia on top.
This meal yields: 289 calories, 13.5 grams of fat, 36 grams of protein, and 7 grams of carbs.
